Welcome to May! With Cinco de Mayo right around the corner, we knew this month’s selection had to be a “Cerveza” with a Texas soul. And what better place to find it than in the comfort of our own home?

While a night out is great, there’s something special about skipping the crowds to create a Fiesta in your own kitchen—where the music is exactly how you like it and the beer is always cold. And that’s exactly how we spent our Thursday night, leisurely sampling our Tres Locos selections: Community Beer Co. Mesa, Save the World Cerveza TX, and 3 Nations Texican. It was a tough job, but someone had to do it! Between the dancing and the chips, we finally found our winner!

The Selection: “El Mero Mero” – 3 Nations Brewing Texican!

Our “best of the best” is a refreshing, approachable Tex-Mex lager that really lightens the mood. It features subtle notes of citrus hops that perfectly complement the flaked corn base. It’s crisp, clean, and exactly what you want when the Texas sun starts to lean into summer.

While the Texican won the night, the competition was stiff:

  • Community Beer Co. Mesa: This was a close second—super light and incredibly easy to drink, but it just lacked that specific “zest” we were looking for to pair with our spicy salsa.
  • Save the World Cerveza TX: This one had a wonderful maltiness and a bit more body. It’s a fantastic craft lager, but the Texican had a “party-ready” crispness that made it the perfect dance partner for our Thursday night.

Ultimately, we chose the Texican because it felt the most balanced—it didn’t fight with the food or the music; it just made everything feel a little more festive.

Cinco de Mayo vs. 16 de Septiembre: What’s the Difference?

While many people mistakenly think of Cinco de Mayo as Mexican Independence Day, it is actually celebrated on September 16th.

Cinco de Mayo actually commemorates the Mexican Army’s victory over the French Empire at the Battle of Puebla in 1862. Over time, particularly here in the US, it has evolved into a beautiful celebration of the fusion between Mexican and American cultures.

In Texas, that cross-cultural influence is everywhere—from our architecture to our music, and especially our craft beer. The 3 Nations Texican embodies that perfectly. It’s a Mexican-style lager brewed right here in North Texas, reflecting the blended heritage that makes our local food and drink scene so unique. It’s more than a beer; it’s the story of where we live.

Our “Sip, Dip & Dance” Checklist:

With the history lesson over and the Texican poured, the real celebration begins. We’ve tried to perfect our “Kitchen Fiesta for Two,” and it really comes down to a few simple elements that turn an ordinary Thursday into something special:

Step 1: The Sip (Tomar) 🍻

Before you even crack the tab, prep your glassware. We went with a heavy Tajín Clásico rim and a thick wedge of fresh lime. That chili-lime salt hitting the crispness of the Texican is what takes it from “just a beer” to a true celebration. It’s the ultimate upgrade for your home cantina.

Step 2: The Dip (Botanear) 🥑

In our household, a fiesta isn’t official until the big three are on the counter: homemade guacamole, a warm bowl of Rotel queso with chorizo, and our favorite Texas Texas brand salsa. But don’t settle for just any bag of chips; we love Late July Mexican Street Corn and Jalapeño Lime chips. Having the right scoop for those specific flavors makes all the difference!

Step 3: The Dance (Bailar) 💃

Clear a little space between the island and the sink! Selena is a non-negotiable must here—honestly, you haven’t lived until you’ve listened to “Bidi Bidi Bom Bom” at full volume! Don’t worry about your footwork. In a kitchen fiesta, the only “judge” is our dogs, and let’s be honest, they’re usually just watching to see if a chip hits the floor. If the music is loud enough that you can’t hear the dishwasher running, you’re doing it right!

Adiós!

Sometimes the best seat in the house is in your own kitchen with the music turned up and a great Texas brew in hand. Every night can be a fiesta if you have the right rhythm (and enough chips)!

Now it’s your turn: What’s the one song that always gets you dancing in the kitchen? And more importantly—what’s your go-to local cerveza to pair with a bowl of guac? Drop your favorites in the comments below!
